8 c. zucchini

1 c. grated carrots

1/2 c. chopped onion

salt and pepper to taste

1 can cream of chicken soup

1 c. sour cream

1 c. grated cheddar cheese

8 oz. pkg. Stove Top Stuffing (not cooked)

1 sq. melted butter

3-4 chicken breasts, cubed and cooked (optional)

Step 1: Cook zucchini, carrots, onion, salt, and pepper until crisp and tender. Add chicken. Step 2: Mix cream of chicken soup, sour cream, and grated cheese. Mix into the squash mixture. Step 3: Mix Stove Top and melted butter. Step 4: Layer in a 9X13 in pan 1/2 of  stove top mixture, all of squash mixture, and then put the rest of the Stove Top mixture on top. Bake at 325° for 30 to 40 minutes.
