Fresh Salsa

2-3 tomatoes (6 roma), finely chopped

1 onion, finely chopped

1/4 C. celery, finely chopped

1/4 C. fresh pepper, finely chopped

1 Tbsp. green canned chilies (or fresh)

1/2 tsp. mustard seed (optional)

Pinch of fresh cilantro

Pinch of garlic salt

Juice of 1/4 lemon

dash of pepper seasoning

salt to taste

Mix and chill the above ingredients 1-2 hours.

Before serving add (optional):

1 Tbsp. red wine vinegar

1/8 C. oil

fresh cilantro to taste

1/2 tsp. pepper
