1/2 C. butter

 12 C. peeled apples

1/2 C. sugar

1 tsp. cinnamon

4 eggs, slightly beaten

1 C. flour

1 C. milk

1/2 tsp. salt

2 tbsp. butter

Melt butter in a large pan over low heat. Add combined apples, sugar, and cinnamon. Cook until apples are tender. Combine eggs, flour, milk, and salt. Beat until smooth. Heat pan (bottom of  broiler pan) in 450 degree oven until very hot. Coat pan with the 2 tablespoons of butter. immediately pour in batter. Bake on lowest rack of over at 450 for 10 minutes. Reduce heat to 350. Continue baking for 10 more minutes or until golden brown. Fill with apple mixture. Cut and serve immediately. Top with preserves or orange sauce (below)

Orange Sauce:

1 can frozen orange juice (small)

1/2 C. water

1 C. sugar

Heat until thick and changes color. If desired, thicken with a small amount of cornstarch.
