Prep time: 30 Minutes

2 Chicken Breasts (12 oz.), cubed

1 Medium Carrot, sliced thin

3 Tbsp. vegetable oil

Marinade:

1 egg

1 Tbsp. soy sauce

1 tsp. cornstarch

1 tsp. flour

1/2 tsp. sugar

1/4 tsp. salt

Place chicken in marinade- set aside.

Sauce:

3 1/2 Tbsp. lemon juice

3 Tbsp. sugar

3 Tbsp. water

1/2 tsp. salt

2 tsp. cornstarch

Directions

Heat oil over high heat. Add marinated chicken, cook, and stir for 1 minute. Add carrots, cook another minute. Add sauce, mix well, cook and stir until chicken coated in sauce and cooked through.
