No Knead Peasant Bread

1 Tbsp. dry yeast
1Tbsp. sugar
1 Tbsp. salt
2 C. warm water (110 degrees)
3 C. whole wheat flour
2 C. white flour
A couple squirts of Pam or other cooking oil
A couple of sprinkles of yellow corn meal
In a medium bowl, mix yeast, sugar and salt. Add warm water and stir. Add whole wheat flour and mix (I use a wooden spoon). Add the regular flour and mix until the flour is incorporated. It's okay to knead the dough a little if it makes you feel better, but no need! Dough will look a bit lumpy and be somewhat sticky. Cover bowl with a piece of plastic wrap and let rise for 45 minutes. Prepare a cookie sheet by spraying 2 circles of Pam or other cooking oil. Sprinkle yellow corn meal on top of oil. Punch down dough and divide into two. Shape dough into round loaves and place on cookie sheet. Mark top with an "X." Place a small ovenproof bowl on bottom rack in a cold oven, fill 1/2 way with boiling water. Place cookie sheet above the water bowl. Set oven to 400 degrees and bake for 35 to 40 minutes. Cool on racks. enjoy warm or later on. Great with butter, honey, jam, cheese...everything!!
