As promised, here is a recipe to go along with the crock pot caramelized onions from earlier this week! I came up with this recipe probably 10 years ago, and it is still a family favorite. I think it hits all the right notes, flavor wise-it’s salty, savory, earthy, sweet and spicy all in one slice. I hope you enjoy it as much as we have! 

Note: I haven’t put amounts on most of the ingredients, add as much or as little of each as you would like. 

Ingredients: 

* Your favorite pizza dough (Jim Lahey’s no-knead dough is my go-to. Google it! Easiest dough you will ever make.)

* About 1/3 lb. cooked, ground Italian sausage-sweet or spicy, both work

* Pepper Jelly

* Cremini mushrooms chopped

* Caramelized onions

* Sage

*Shredded mozzarella

* Shaved Parmesan

* 2 Tbsp. butter (optional) 

Directions: 

Preheat oven to its highest temperature (usually 500°). If you are using a pizza stone, preheat that as well. 

Stretch dough into a circle and top with a thin layer of pepper jelly first, then layer the caramelized onions, chopped mushrooms, cooked sausage, and some torn sage. Sprinkle a good amount of shredded mozzarella, and a smaller amount of parmesan  over the top and cook in the preheated oven for 10-15 minutes, or until the pizza crust is cooked and the cheese is melted. I like to turn on the broiler for a minute at the end to rosy up the cheese. Once the pizza is out of the oven, you can brush a little salted butter on the crust if you would like.
