1 (10 to 12 lb.) boneless prime rib
1/2 cup Lawry's salt
1/2 cup lemon pepper
Mix 1/2 cup Lawry's salt and 1/2 cup lemon pepper together. Place roast in a heavy roasting pan. Rub entire roast with this seasoning mixture; place roast in a 500 degree oven for 15 minutes, searing the roast well. Turn the oven down to 325 degrees (do not open the oven door). Bake roast for 2 1/2-3 hours, with a meat thermometer put in the thickest part of the roast, check for exact wellness. When finished roasting, take out of oven and let sit for 12-15 minutes. slice and serve.
