Layer in crockpot:
1/4 C olive oil
1 C. julienned red onion
1 Tbsp. minced jalapeno pepper
1 C. chopped red pepper
3 C. roasted, shredded, boneless chicken
salt/pepper
1 Tbsp. garlic powder
1/2 C. shredded mozzarella cheese
1/2 C. cream cheese, cubed
1/4 C. grated Parmesan cheese
1/4 C. lemon juice
Heat 2-3 hours on HIGH (or until hot and bubbly and all the cheeses are melted). Stir together and serve on buns or in tortillas with sliced or chopped tomatoes.
