Whole Grain Waffles

1 C. all-purpose flour

1/2 C. oat flour

1/2 C. whole wheat flour

2 tbsp. flax seed meal

2 1/4 tsp. baking powder

1/2 tsp. salt

2 tsp. sugar

2 C. milk

5 tbsp. honey

1/4 C. butter, melted

3 large eggs, separated

in a medium bowl, mix together flours, flax seed meal, baking powder, sugar, and salt. In a small bowl, beat egg yolks. Add milk, honey, and butter to the egg yolks, beating after each addition. in clean, dry glass or metal bowl, beat egg whites until stiff peaks form. Add egg-milk mixture to flour mixture and stir until moistened. Fold egg whites into batter until just blended. Cook according to your waffle iron directions. Makes approximately 8 waffles.
